Ingredients:

  • 1 pound fish fillets (such as cod, tilapia, or salmon)
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1 cup coconut milk
  • 1/2 cup water
  • Salt, to taste
  • Fresh cilantro, for serving

Instructions:

  1. Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
  2. Add the cumin, coriander, turmeric, and chili powder and cook for another minute.
  3. Add the coconut milk, water, and salt and bring to a simmer.
  4. Add the fish fillets to the saucepan and simmer until the fish is cooked through, about 10 minutes.
  5. Serve the curry with rice and top with fresh cilantro. Enjoy!
