Fish Curry Recipe

Ingredients:
- 1 pound fish fillets (such as cod, tilapia, or salmon)
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1 cup coconut milk
- 1/2 cup water
- Salt, to taste
- Fresh cilantro, for serving
Instructions:
- Heat the oil in a large saucepan over medium heat. Add the onion, garlic, and ginger and cook until the onion is soft and translucent, about 5 minutes.
- Add the cumin, coriander, turmeric, and chili powder and cook for another minute.
- Add the coconut milk, water, and salt and bring to a simmer.
- Add the fish fillets to the saucepan and simmer until the fish is cooked through, about 10 minutes.
- Serve the curry with rice and top with fresh cilantro. Enjoy!
